Management:
In the vineyard: Green covercrop, high
trellis, distubbing , thinning out the leaves, manual harvest
naturally maintained grass.
In the cellar: selection on sorting table,
destemming, long maceration with controlled temperature, punching cap
down
Aging
in barrels for 8 to 12 months depending on the vintage and the year.
